Course Description

The Year 12 Hospitality course emphasises developing practical kitchen and espresso coffee beverage service skills. It will allow you to experience and participate in activities in various authentic contexts, with a strong focus on strengthening your knowledge of cookery methods, culinary creativity, food safety, and teamwork. It will enable you to gain insight into the hospitality sector and vocational pathways for the future.

Due to the practical nature of the course, students will prepare and cook in a commercial kitchen during most periods. They will also gain experience working in the school C7 Cafe and involvement with community catering activities.  Students will also be encouraged to compete in the ARA Food and Beverage competitions in June.

Topics Overview

Food Safety
Food safety is critical to ensuring our food is safe to eat. You will learn about critical time and temperature control, cross-contamination and personal hygiene practices. Food safety is also a valuable and highly transferable skill and knowledge base which can be applied to many employment environments, as well as the family home.


Knives
You will be introduced to knife handling and maintenance skills and, throughout the year, will develop these skills by preparing dishes with an emphasis on contemporary flavours and presentation. Specialist knife identification, selection, maintenance and sharpening will be included.

Grilling
During this unit, you will gain a basic understanding of how to prepare suitable foods for grilling and then apply direct and indirect heat grilling methods to create attractive and tasty meat and vegetable dishes. You will also focus on improving your speed and work area organisation.

Frying
During this unit, you will learn to shallow and deep fry a variety of vegetable and protein foods for individual portion service. Dishes from different cultures will be included, and students will be encouraged to develop their food presentation skills. A range of different frying equipment will be explored and used.

Espresso Coffee
Coffee is a massive part of the Hospitality industry, and espresso coffee has become increasingly popular over the last twenty years. This introductory unit will explore how commercial espresso machines and grinders work and how they are maintained daily. You will learn how to heat and texture milk with microfoam and correctly extract espresso while making a range of coffee and alternative beverages.

Team Work Cafe
Now that you have mastered your culinary and coffee skills, you must put these into action by serving paying customers. These experiences aim to provide a realistic work environment that highlights the importance of collaborative teamwork, taking responsibility for completing duties assigned to you, managing time pressures, and meeting quality control requirements.

Recommended Prior Learning

This course has no prerequisites; open entry for all. Previous Food Technology, Hospitality or Food and Nutrition experience can be helpful, but not compulsory

Assessment Information

The programme utilises six hospitality industry-recognised Unit Standards awarded as Achieved or Not Achieved. There are no external assessments for this programme. The majority of assessments are practically orientated, with some short written tasks.

Please note that courses will go ahead only if student numbers, staffing, and timetabling allow it.  Where a subject is oversubscribed, and there are insufficient numbers or resources to create an extra class, a ballot system may be applied.  

Costs

The Board of Trustees has again asked to opt into the Ministry of Education donation scheme. Doing so resulted in the ability to waive student fee donations. Kaiapoi High School aims to deliver quality educational courses over and above those that which is funded by the Ministry. It is likely the School will opt into the donation scheme for 2025, however parental contribution for the costs of trips and activities where participation is optional, and/or components not covered by the Government grant, may be requested. We appreciate the financial support our families make to the School.
